Meet The Chef

I started my chef apprenticeship at the age of 18. After two years working as a waiter at the iconic Auckland Restaurant 'Harbourside' - where the food was the focus and the chefs showed a passion that fasinated me - I fell in LOVE! 


I moved to Scotland and finished my training in five star hotels, castles and country manors working with talented French and European chefs.


Returning to New Zealand, I worked with top New Zealand Chefs, before gaining my first Head Chef role at 'Barossa' then moving on to the West Haven Yacht Club. I relocated to Australia and worked in 5 star hotels and fine dining restaurants in Sydney, Airlie Beach, and Perth before finding myself in Port Douglas. After 2 years as Executive Chef at both the Peppers Beach Club & Spa and then Nautilus Restaurant, I now devote my time to producing the finest food and events for my clients.


My passion is using the freshest ingredients mixing traditional French methods with Asian flavours and a touch of molecular gastronomy. 


Highlights in my career having an award winning restaurant Kai, being a finalist in the 2023 Qld Chef of the year and taking out the title of 'Gourmet Gladiator' at the 2009 Port Douglas Carnivale whilst also having a number of signature dishes published in the 'Great Chefs of Australia' cookbook series,
